Im changing the head gasket, now

Do I go for the Cosworth 1.1mm or 1.5mm I will be having the head skimmed so what's best ???

I think if your getting the head skimmed i would imagine the later depends also what set up you are running etc but im not the best one for advice on this lol

as above really it depends on your setup and how much is removed from head to determine what comp ratio you wish to run.
but i would say the 1.5mm tbh
